Cuban Grilled Corn on the Cob with Queso Blanco & Lime

Corn has always been an ingredient close at heart for me. My first dish made for this blog was a 4 texture corn dish as well, looking back, man that was literally a year ago! So just for a little bit of fun, I have decided to try out this simple recipe of grilled corn on the cob with some Cuban style spice mix top up with some Queso Blanco and lime!


Ingredients
4 corn ears in husks, silks removed
2 tsp chilli powder
1 tsp paprika
1tbsp salt
6 tbsp butter
1.2 cup finely grated queso blanco
1 lime, cut into quarters

Methods
1) In a large saucepan filled with salted boiling water, cook corn in husks for 8 minutes. Meanwhile in a small bowl, combine chilli powder, paprika and salt.

2) On a medium grill or in a broiler, grill corn just until char marks are visible on husks. Remove and let cool. Pull back husks, rub corn with butter, and sprinkle with cheese and paprika mixture. Serve with lime wedges.

There you go! Simple as pie and boy it was yummy! Just a heads up, go easy n the paprika powder if you're not one for spicy food but yea, hope you guys will enjoy this little dish!
